This coffee is from a small farm group called "Hadomi", within the District of Ermera. Unlike some of our other coffees from Timor Leste that are processed at a central milling site, this lot is home processed, meaning the coffee cherry is harvested and processed down to dry parchment by each farmer. The coffee cherry is often depulped with handmade equipment (see photos) that removes the outer cherry. They then ferment the coffee in buckets or tanks to break down the sticky mucilage before drying on tarps or patios or tables. Elevation spans a range of 1400 to 1800 meters above sea level. Typical cultivars you see in this are are Timor Hybrid and Typica types, grown under natural shade of the local casuarina trees, which also act as a source of nitrogen for the coffee crops (what's often referred to as a "nitrogen fixer"). This is another beautiful Farm Gate coffee that is great as espresso.
